I think you did a great job, I'm a chef so I can tell you, Chinese 5 spice isn't for everybody, taste like black licorice 🤮. I brine all my poultry, and let it air dry before roasting or grilling.

We used to have roast goose growing up. We kept the rendered fat for chicken fried steaks...the flavor of those steaks was incredible.

I use your rub. I stuffed it a little differently, wild rice,
Apples, apricots, and half a peeled Orange.
Apparently I did something right because everybody ate it and I didn't get any.

goose is very popular in germany, and definitely a favorite, for christmas but also all year long (very old traditionally, like sunday goose). i guess my german 'traditional culture' as a 'hunters culture' other things that are great to try are wild boar, pheasant, rabbit. germans used to have a very 'celebrated' hunters 'guild' i guess you could say (like jägermeister is literally the highest rank of that old no longer existing probably guild translates to 'hunter master' as an occupation). and of course there is always deer, venison. but when you used that final basting mixture just from the ingredients i could tell that was going to be a great 'finish' for a goose, as the little bit of sweet really brings out the flavor. definitely something to try. not sure if you know about brining, which helps if you want to avoid dry meat (i'm not really a great cook, so that works for me).

Goose fat makes superb cooking fat, say, for fried potatoes, and little is actually absorbed. It is also an old time healing salve. Keep a small jar in the refrigerator for that. Label it. People should not be throwing out goose fat. Good grief look online what it costs. ;-)


I roast goose at a high temp on a rack,with the goose skin pricked all over to release the fat. Save the fat, lower the temp to 250F. That fat is precious, people.

Wow! That's a pretty good looking first goose. I tried cooking a duck once, but ended up with a whole lot of grease and a crispy bag of bones. I don't think I'd have the nerve to try a goose.

I cooked a Goose in a fuel stove in 1974. So so good. Squeeze out the oil gland under the tail to help. (I say this before watching your vid)

This was amazing. Does it taste different than turkey? The bird looked more stiff than turkey I think. I made my first turkey this year and glad it turned out good. Happy holidays ❤️

I have never made a goose. Was always afraid, like you said, it might have a gamey taste. I’ve never had duck either for the same reason. My husband said he had duck once and it tasted fishy because they eat fish. Plus I was surprised the goose had such a dark colored meat. Not sure my family would eat it. You are braver than me. How did your family like it?

I cooked a goose about 20 years ago. I was shocked at how much fat was rendered. I kept having to drain the roasting pan so it wouldn’t overflow. In the end, it wasn’t worth the trouble and I would have preferred turkey.
